Chicken and Vegetable Curry (potentially vegan)

Cold days cry out for a spicy curry. This is a really good one because it is healthy, full of fresh, antioxidant loaded veggies and skinless chicken. Make it vegan by omitting chicken. 1/4 cup chopped, fresh ginger 3 fat … Continue reading
Slow Cooker Asian Beef Short Ribs

Braising all day in this Asian sauce, the boneless beef ribs come out so tender and flavorful. They are great served with wasabi mashed potatoes and sautéed, sesame broccoli. 1 cup beef broth 2 tablespoons Wondra or all purpose flour 1 … Continue reading
Bo Ssam

What comes to the table is nothing short of awe-inspiring. The whole, lacquered, roast is placed in the middle of the table along side kimchi (Korean, fermented vegetables) an assortment of sauces, and some steamed sticky rice. Everyone digs in with their own forks, filling Bibb lettuce cups with the most amazingly tender pork, a spoon of gingery-scalliony sauce and kimchi. And then it all goes quiet.

Slow Cooker Pulled Chicken Sandwiches

Sometimes I get a hankering for something very midwestern. My roots, as well as my parents, are there. To me, midwestern cuisine screams canned or dried soup. It just does– right or wrong, I think of casseroles with canned cream … Continue reading
Umami’s Magic Dusting Powder

You’ve tasted it a million times, like when you had that mind-blowing grilled hamburger with sautéed mushrooms at that place– it was so good because it was so umami. Continue reading
Rigatoni with Artichokes and Country Ham

Country ham is like southern prosciutto. Okay, not quite as delicate or complex as prosciutto in northern Italy, but really tasty and useful and stubbornly only found in southern states. Continue reading
Slow Cooker Beef with Noodles

Jen also uses her Crockpot in the summer, which at first was confusing; I associate slow cooking with dark, chilly, winter days. Using a Crockpot in the summer– in the south– makes perfect sense, though: It cooks a delicious meal, hands free, without heating up the kitchen.
Well played, friend Jen. Continue reading
Weeknight, Turkey-Meatball Subs

These are so family friendly, it’s redunkulous. Mix up the meat and shape the meatballs in the morning, stash them in the fridge, then simmer gently when you get home in the evening. Simple. 1 pound lean ground turkey breast … Continue reading
Wasabi Chicken Salad in Crisp Wonton Cups
I wrote this recipe for an article about picnic fare in June’s Charlotte Magazine. It is a yummy twist on classic chicken salad. The wasabi in this recipe is not overly spicy, it’s more of a background flavor. It’s slight heat dissipates … Continue reading
Persian Chicken
In keeping with the Middle Eastern Palooza going on in the world these days, I decided to cook with some flavors from that region. This one’s a keeper. The yogurt/olive oil marinade keeps the chicken juicy, the saffron, cumin and … Continue reading
